My husband had some problems with excess salt last year, so we have been trying to make our food with little to no salt. One of our weaknesses are tacos, and try finding a salt free taco seasoning. So I found one online and made it and we love it. Then I get the bright idea to put it in tiny little mason jars (the seasoning mix) and give it out for Christmas to our families.

So my husband has this gauge in the living room that tells you the chance of rain, humidity, and temp.
Last night we had a storm, it was pouring out and you could hear it.
I looked up at the gauge and told him how much of a lifesaver it was that we had something that told us when it was raining.
Then I get online and it says there is a 100% chance of rain. For pity sakes, why can't it just say "raining"?

3 months after my son was born and I still can't believe a BABY came out of me. I remember laying on the hospital bed getting stitches and gazing into his eyes. You want to know what was going through my mind?
I don't have a vagina anymore. It's just not possible. This creature that just tore me to shreds is way too big to have left anything resembling a vagina behind. I should just tell her to give up, I just know its not possible.
Its like the airplane thing, how in the heck does something that big get up in the air? The same way a watermelon comes out of a woman and she still has her vagina intact.

1 LB 97% lean ground turkey, uncoooked
2 Jars 26oz spaghetti sauce
1 onion, chopped
2 bell peppers, chopped
2 cloves of garlic, minced
Throw everything in a crockpot. Cook on low for 6-7 hours. You will have awesome sauce for pasta, spaghetti, or lasagna.
All the recipes out there that use ground beef tell you to brown the meat first before putting it into a crockpot. This is because of the fat that comes out of it in cooking, you want to drain the fat. If you use 97% lean ground turkey, you can put it in the crockpot raw, there really isn't going to be much fat. I've cooked it in a skillet before and there isn't anything to drain out. Also I use red, orange, yellow and green bell peppers, makes a beautiful presentation (hence, "confetti") and it gives the sauce lots of different nutrients. I make a triple batch, separate into freezer bags, and freeze. Then when you want pasta, just put the frozen bag into a sink of hot water and it will be thawed out by the time the pasta is done, then combine, heat thouroughly and serve. This is the best way to eat whole grain pasta. Just overcook the pasta a bit, combine with lots of sauce and you won't be able to tell its whole wheat.

I guess the theme of this journal is accountability. I really want to exercise, but can't ever remember to do it. I also want to share some recipes I've developed. Simple things to make eating healthy easier. My husband and I have gone from hot dogs and mac and cheese to whole wheat pasta and steamed veggies, painlessly. Everyone likes healthy food, its figuring out how to make it the way they like it that is the challenge.
Now if we could just lay off the mickie d's we might be able to lose a pound or two.
